Well. We've got to have something to do while waiting for the cider to be ready to bottle. How about an attempt at some fabulous Cranberry Wine!
Recipe
4lbs of Fresh Cranberries
1.5 lbs of Sultanas or Golden Raisins, minced
2 lbs of Sugar
Pectic Enzyme
Campden Tablet
1 Gallon of Water
1 dry yeast packet
We put the cranberries and raisins (in a cheesecloth bag) in 1 gallon of boiling water until they popped. Add and dissolve sugar. Pour the whole mixture in the primary fermenter. Add pectic and crushed campden tablet when at room temperature and wait 24 hours. Next, we're planning on pitching some Cuvee yeast and seeing what happens.
Ps. Have discovered a new great grocery store. The Fresh Market. Ok. We actually can't afford to do all our shopping here, but it's where we pick up stuff for our cider/winemaking since we're trying to get the best ingredients possible. Let me tell you-- if you have one around, you must go in. It's beautiful. Like Trader Joes with better lighting and classical music.
